LA JIMA

When the agave plants are ripe enough to start the production process, they are harvested through an artisan elaboration process called "jima" which has been done in the same way for several centuries. In this process, jimadores go through the fields trimming away the leaves and removing the hearts of the plants, also known as “piñas” which will be used during the distillation process.
